Pickled Hot Peppers

I’ve been easy-pickling hot peppers from the garden this summer.

My garden is doing OK: the changes I made for more sun exposure have helped, and a few plants have produced extremely well. My tomatoes are being robbed by critters (raccoons, chipmunks, squirrels, and maybe even ducks) and my carrots are too much in the shadow lee of the box. Next year I’ll raise the soil level in the garden to mitigate this issue. I also need to figure out how to keep animals out of my tomatoes.

But my hot peppers (both jalapeños and red cherry peppers) are doing very well, and I just made my third batch of pickled hot peppers. They are very hot and very good.
